Roast Pumpkin with Honey, Feta and Pepitas
Winter or Summer this recipe is a fabulous addition to dinner time. The perfect combination of salty, sweet and crunchy! Manuka honey adds a richness that is sure to please!
- 600g (approx) pumpkin
- 3 tbsp olive oil
- 2 tbsp pepitas
- 3 tbsp Comvita Mānuka Blend honey
- 1 tbsp balsamic vinegar
- 50g feta cheese, crumbled
- Salt and pepper to season
- Sprig of parsley, roughly chopped
Step 1: Preheat oven to 210ºC. Peel the pumpkin and remove the seeds. Cut into thin slices.
Step 2: Coat the pumpkin in the olive oil. Bake for 20 minutes.
Step 3: Remove from the oven and add pepitas. Return to oven for 10 minutes.
Step 4: Drizzle roasted pumpkin and pepitas with the honey and balsamic vinegar. Crumble over feta. Add salt and pepper and parsley.
Enjoy hot or cold!
